Buffalo Chicken Meatball Pasta

Once I discovered the mini buff chick meatballs at TJ’s that I used for my wrap, I was dead set on using them in other ways, especially after my beau commented that he thought they were yummy. This time, I went with pasta.

While pasta is cooking (I used a heart shape, but any short/bow tie/wheel shape will work), sauté sliced mushrooms in butter. Once they’re at least halfway done, add grape tomatoes and cook until they burst. At this point, you’ve basically made a light sauce so it’s time to up the flavor a bit by adding lots of minced garlic, a dash of milk, and salt and pepper. Microwave the buffalo chicken meatballs according to the package directions and toss the pasta with the sauce, meatballs, and torn fresh mozz. Top with grated Parmesan.
